Carrot cake Recipe

  • 1 carrot blended
  • 250g of flour
  • 1 ½ tsp baking powder
  • 1tsp baking soda
  • ½ tsp salt
  • 4 eggs
  • 200g sugar
  • 3tbsp orange zest
  • 1tbsp orange juice
  • ¾ cup vegetable oil
  • OPT: sultana


  1. Mix the dry ingredients well and set aside
  2. Whisk eggs in a clean bowl, add the sugar and mix till pale and fluffy
  3. Add in the orange zest and orange juice and fold in the dry ingredients gently till well combined
  4. Add in the blended carrot and pour in a greased baking pan
  5. Tap the bottom of the pan slightly to let it set and remove air bubbles
  6. Optional to add in the sultanas after putting it in the pan and mix with a tooth pick.
  7. And bake for 90 minutes in a preheated oven of 170 C.

Enjoy with ice-cream, a hot cupper or just as it is 🙂
