WHAT YOU NEED:
- 1 carrot blended
- 250g of flour
- 1 ½ tsp baking powder
- 1tsp baking soda
- ½ tsp salt
- 4 eggs
- 200g sugar
- 3tbsp orange zest
- 1tbsp orange juice
- ¾ cup vegetable oil
- OPT: sultana
HOW TO MAKE IT:
- Mix the dry ingredients well and set aside
- Whisk eggs in a clean bowl, add the sugar and mix till pale and fluffy
- Add in the orange zest and orange juice and fold in the dry ingredients gently till well combined
- Add in the blended carrot and pour in a greased baking pan
- Tap the bottom of the pan slightly to let it set and remove air bubbles
- Optional to add in the sultanas after putting it in the pan and mix with a tooth pick.
- And bake for 90 minutes in a preheated oven of 170 C.
Enjoy with ice-cream, a hot cupper or just as it is 🙂
