Rourou (taro leaves) lamb neck in coconut milk

A recipe that my Aunty prepared for us last week. You may have your way of making this delicious dish but here is how Aunty Noa prepared it!! i had 3 serves….try it and enjoy!!

WHAT YOU NEED:rourou

  • 3-4 bundles of rourou cut up finely
  • 1kg of lamb neck
  • Coconut milk from 3-4 coconuts
  • 1onion diced
  • Garlic and ginger minced
  • 1 TBSP of mixed spices
  • 1 TBSP baking soda
  • Oil for cooking
  • SALT TO TASTE

HOW TO MAKE IT:

  1. Heat enough oil in a big clean pot
  2. Add in your spices and stir
  3. Add in the minced garlic and ginger and stir
  4. Add in the onions and stir
  5. Once lightly brown, add in the lamb neck and stir well and cook till nice and soft
  6. Once cooked set it aside
  7. And in a separate pot, boil half pot of water
  8. When the water boils, add in the baking soda and add in the rourou and let it boil till nice and soft stirring constantly
  9. Once done, remove from the heat, drain the water, mash it nicely and add it to the cooked lamb neck
  10. Pour in the coconut milk and salt to taste and return it to the stove or open fire
  11. Cook and stir till well blended and coconut milk thickens
  12. Serve with cooked taro or cassava or some sweet potatoe
