Pumpkin and cabbage curry

Another lovely recipe for us to try….great for vegetarians 🙂

WHAT YOU NEED:

  • Half of a medium sized pumpkin peeled, washed and cut in small cudes
  • 1 round cabbage finely chopped
  • Half an onion diced
  • Garlic and ginger minced
  • Mixed curry powder
  • Mixed spices
  • Salt to taste
  • Oil for cooking

HOW TO MAKE IT:

  1. Heat oil in a clean pot
  2. Add in the mixed spices and stir from 30seconds before
  3. Adding the garlic and ginger, mix well
  4. Add in the onion and curry powder and stir till it’s well blended
  5. Wait for a minute
  6. Add in the pumpkin and cook till it is nice and soft
  7. Once it’s cooked, remove it from the heat and add in the cabbage
  8. All you have to do, is mix it well to blend in with the pumpkin
  9. And don’t forget to salt it to your taste and your good to go

With the cabbage nice and crunchy it gives a different taste to the food with a sprinkle of dhania to top it off, will be even more delicious!!

This will be nice to have with rice but even better to have with roti so try it out & enjoy
