Chilled Tomato Soup

A refreshing soup full of flavor and spice!

HOW TO MAKE IT:

  • 2 pint grape tomatoes or similar

  • 3 clove fresh garlic minced

  • 2 tablespoon chili pepper water

  • 1 teaspoon salt

  • 1/8 cup extra virgin oil

HOW TO MAKE IT:

  • Place tomatoes, garlic, chili pepper water and salt in a blender. Blend on high speed to completely liquefy the ingredients.
  • Gradually pour in the extra virgin olive oil until completely incorporated.
  • Chill.
  • Serve with basil pesto and kalamata olives.

A lovely soup for a flu….enjoy!
