Baigani vakalolo with tin fish (eggplant with tin fish in coconut milk)

So we Lauans love anything in coconut milk esp when we have Togan blood running through our veins. lol

Not many would combine eggplant and coconut milk but this is a must try and i tell you, you won’t be disappointed.

Made this for the family on Monday night and there were left overs so had it for breakfast and i tell you, that took me through like the whole day. It is delicious!!

Here is what you need:

  • 1 tin fish or a tin tuna
  • 1 or 2 heaps of eggplant (Depending on the amount of people in the family) nicely washed and diced into cubes or into desired size.
  • half onion diced
  • 4 garlic clove minced
  • oil for cooking
  • thick coconut milk from 2-3 coconuts
  • salt to taste
Here is how to make it:
  1. Heat the oil in a clean pot and fry the onion and garlic till light brown.
  2. Add in the eggplant and stir till well combined with the onion and garlic
  3. cook for 1 minute and add in the coconut milk 
  4. salt to taste
  5. once the coconut milk starts to simmer, add in the tin fish or the tin tuna and let cook for another 2-3 minutes till the eggplant is nicely cooked and soft.
  6. once you are happy with the softness, remove from the heat and serve in a clean bowl with some nice cooked dalo or cassava.
